Potatoes & Spinach


  • 1/2 tsp. ginger: finely chopped
  • 3 potatoes: peeled, parboiled and cut into 1/2 inch cubes
  • 1 tomato: chopped
  • 1/2 onion chopped
  • 1/2 cup spinach
  • 1 tsp mustard seeds
  • 3 green chillies (optional)
  • 3 tbsp kasoori methi (dried fenugreek leaves)
  • Chilli powder: to taste
  • 1 tsp cilantro


  • Peel, parboil and cut potatoes into 1/2 inch cubes
  • Add 2 tbsp of oil in a large skillet. When hot add the mustard seeds
  • When the mustard seeds begin to sputter, add the onions
  • Once onions are brown, add the ginger, tomatoes and potatoes, spinach, fenugreek leaves
  • Also add chilli powder & turmeric
  • Cover & cook until potatoes are well done.
  • Note: if it begins to stick, just sprinkle some water and cover.
