Breakfast Fusion Burritos

This has become one of our favorite weekend breakfast foods! The recipe below is the non-meat version, but of course the possibilities are endless! If we are not having the eggs in a nest at the East side farmers market, we are at home eating breakfast burritos on Saturday mornings. It’s fast becoming a part of weekend ritual.

Ingredients
  • 3 eggs
  • 1 potato
  • 1 scallion
  • 1 clove garlic
  • A few basil leaves
  • 4 tortillas (I used wheat, but corn would work too)
  • 2 small balls of mozarella
  • Adobo chilli for a little heat
  • Hot sauce for some more heat
  • Pepper & salt to taste
Prep
  • Dice the potatoes – the smaller the dice faster you eat 🙂
  • Julienne the scallion
  • Mince the garlic
  • Beat the eggs, with a splash of milk. Add the black pepper, salt and adobo chili (or any other chili powder) to taste
Cook
  • In a sauce pan, add a little olive oil and fry up the potatoes. Once cooked, keep aside
  • In the same sauce pan saute the scallions until browned. Keep aside
  • Scramble the eggs
  • When almost cooked add the basil and mozarella
  • In the meantime, reheat the tortillas

Assemble
  • Fill each tortilla with a bit of the potatoes, scallions, eggs
  • Top with a few slices of mozarella (optional)
  • Finally, pour on the hot sauce

Voila – breakfast is served!
