Ingredients
- 1/2 tsp. ginger: finely chopped
- 3 potatoes: peeled, parboiled and cut into 1/2 inch cubes
- 1 tomato: chopped
- 1/2 onion chopped
- 1/2 cup spinach
- 1 tsp mustard seeds
- 3 green chillies (optional)
- 3 tbsp kasoori methi (dried fenugreek leaves)
- Chilli powder: to taste
- 1 tsp cilantro
Method
- Peel, parboil and cut potatoes into 1/2 inch cubes
- Add 2 tbsp of oil in a large skillet. When hot add the mustard seeds
- When the mustard seeds begin to sputter, add the onions
- Once onions are brown, add the ginger, tomatoes and potatoes, spinach, fenugreek leaves
- Also add chilli powder & turmeric
- Cover & cook until potatoes are well done.
- Note: if it begins to stick, just sprinkle some water and cover.
